Morning Dessert
Good day yall! Today I will be posting about food, a Filipino dessert. This one has lots of name, depending on what part of the Philippines you are from. Some call it Bibingka, Bingka, Puto and a lot more. This is actually a rice cake, made of rice flour and coconut milk and we usually eat it with coffee or native chocolate drink in the morning instead of eating it as a dessert. There are hundred different ways how to cook this cake, as I said depending on what part in the Philippines you are from. In the Visayas area where I am from, the most delicious Bingka for me is the one made in Mandaue. I have been looking and asking everybody of the recipe but until now I couldn't get a hold of it. Today, I tried the recipe I found in the internet.
Ingredients:
1cup rice four
1/2 cup all purpose flour
2 tsp baking powder
1/2 cup water
2 eggs slightly beaten
1/2 cup sugar
cheese for toppings ( I use mozzarella, that's the only cheese I have at home)
2 tsp butter
2/3 cup coconut milk
banana leaves for mold linings
Instructions:
- Preheat oven to 350F.
- Line the molds with banana leaf. The banana leaf makes the cooked Bingka smells delicious.
- Combine the dry ingredients, sugar, rice flour, baking powder and all purpose four in a bowl.
- Combine the wet ingredients, slightly beaten eggs, butter, coconut milk and water in another bowl.
- Pour the wet mixture to the dry mixture slowly and combine thoroughly.
- Fill the prepared molds and top with grated cheese.
- Bake for about 25 minutes until the top turns brown.
It came out pretty good and taste delicious. The recipe makes about 8-10 Bingka.
I am eating it right now while I type this blog, so good with coffee in this cold morning!
